Your muffins look perfect! I agree with Nancy, no such thing as too much brown sugar! I love coffee, but I've been pregnant and/or breast-feeding for almost 4 years, so I have a decaf every once in a while, but I had to pretty much drop the habit... I love the idea of subbing in some yogurt, I'll have to try that next time. I loved these muffins, I'll definitely be making them again.

Awww, your coffee story sounds just like mine! I never wanted to be addicted, so I didn't own a coffeemaker for years. I'd drink it at Mom's or when Starbucks broke out the pumpkin spice latte or peppermint mocha.Now, I live ridiculously close to a Starbucks AND got a coffeemaker as a wedding present, so ... I'm not fighting it anymore, and these muffins go with it soooooo well. YUM.

I had to have these with coffee, it just seemed wrong not to. Sometimes things don't go so well when I bake before coffee even though I drink 75% decaf (any more than that and I get a migraine a week). I love it when you can make a mistake like swapping out the sugars and the recipe still works. Nice job!

After reading your account I think I might flip the sugars accidentally-on-purpost. There's no such thing as too much brown sugar. I love the taste of coffee also but have never fallen into the habit (mostly because of what it does to my heart). Great muffins, and a great post!

They were delicious! I loved the way they smelled while they were baking too. I'm a relatively recent new-comer to coffee. Only been drinking it for about 7 years...made it through college and grad school without drinking it at all. Now I'm deathly addicted. :P
