As for roasting upside down, I'm sure I've seen recipes use that as a method to keep breast meat from drying out when roasting birds, since the breast gets done sooner than the dark meat. I had to laugh because I roasted our Thanksgiving turkey upside down the first Thanksgiving my hubs and I had Thanksgiving in our own house.  My mom figured out what was wrong, and I totally did not have a sense of humor about it (I've since learned that I do things like that way too often to let it get to me!)  Great job on the stock, too.  I've tried to get into the habit of making a huge pot of stock once every couple of months and freezing it, and it's made such a difference in soups (and other things!).
