TWD: My Favorite Pecan Pie



I don't know if pecan pie is peculiarly Texan dessert, I suspect it's more southern than Texan, but there are three desserts that I think of as quintessential Texas dessert and pecan pie is one of them. The other two? Texas sheet cake and cobbler. When I think of pecan pie, I just hear "pee-can pah" in my head, even though my family says (and thus I say) "puh-cahn" not "pee-can." At any rate, I adore a good slice of pecan pie but it's hard to come by. In fact, some of the worst pecan pies I've ever eaten have been from my own hands. There are all sorts of variations on the filling, some with molasses, some with honey or maple syrup, and some with a hint of bourbon. My dad swears that the recipe on the back of the Karo syrup bottle is the key to making a good pecan pie; however, I'm never content to settle on one recipe, and I was eager to try Dorie's favorite pecan pie.

Now, when I was little, I would only eat pecan pie if it had chocolate chips in it, but as I've gotten older I've become something of a pecan pie purist. I like my pecan pie plain -- no cinnamon, no espresso, and no chocolate for me. I made the simple pecan pie.





And . . . it was good. I had issues with the cook time. When I checked it after 35 minutes it was still really jiggly, so I left it for 8 minutes and checked it again. Still jiggly, 4 minutes this time. Still a little jiggly. 3 minutes, and at that point I was a little concerned that maybe I'd actually been overcooking it the entire time, and I pulled it out of the oven. As it turns out, it probably could have stood to spend another 5 minutes in the oven as the center of my pie is a little runny. I'm pretty sure this happened because my pie plate was chilled from the fridge rather than at room temperature when I put it in the oven. So, is it my favorite pecan pie? No. Don't get me wrong, it's tasty, but I have some other pecan pie recipes I need to try out before I can declare a winner.  In the meantime, thanks, Beth, for choosing this recipe. Hi Jessica, I'm a "puh-cahn" girl too and I really like the Karo recipe for pecan pie as well. I did kinda like the coffee flavor in Dories recipe but couldn't bring myself to add the cinnamon.

Don't think I have ever mentioned how much I enjoy your blog visiting with you!

I think your pie looks great and I love the stars on top..nice! I loved this recipe but my hubby still likes the good old Karo Pecan Pie recipe better!

I don't think the baking time was your fault - I think everyone had the jiggles! Your pie is just beautiful.

I used to love the huge bags of pee-cans my Texan great-aunt would bring when she visited. The grocery store kind just don't measure up!

What a beautiful pie Jessica! I love the decorative stars on top. I haven't even thought about making this pie yet...maybe later this week, if I have time. I'm not a fan of pecan pie so it's probably not as high on my list as it might otherwise be :)

Mine was undercooked a bit too - and I was afraid I had overcooked it. Ah well - a good pie, but there are plenty more to try!

Puh cahn IS the correct way to say this nuts name. Only Yankees call it Pee-can.. LOL

Also a purist. Like mine just plain puh-cahn pie. Yours looks so celebratory with the stars on the top.

Your pie looks terrific--I love the stars on top. I've found that one of the great things about living in Texas is that we get fantastic pecans here. Mmm.

Pecan pie is the BEST. And yours looks pretty darned perfect, but I hope you experiment with the extras Dorie added, as they created a whole different dessert.

I love that you made this one "straight up" - even if it's not your very favorite, at least you produced a tasty one in your own kitchen. And I'll be very interested to see your future pee-can or puh-cahn experiments!

My favorite one has maple syrup, but I don't mind trying different recipes to see if there's a better one. Our local pecan harvest was pitiful this year so I will have to choose my pecan-based recipes pretty carefully.

Love the Texas stars on your pie. My turned out a bit runny, but the flavor was good.
