Snickerdoodle Cupcakes

Bear with me, I don't have any applesauce sauce bars here yet. I've been having serious personal grocery store issues. They're pretty simple: I don't want to go. You see, I need to go get applesauce, but I still have my essentials, and I just hate grocery shopping. I'm going to try to go after work this evening, and hopefully I'll have the applesauce bars posted later tonight.

I made these snickerdoodle cupcakes to take to work for my friend Anthony's last day. Anthony was our TA this summer, and I loved chatting with him while I was making my copies before class each day. He's headed off to U Penn to get a degree in biochem, and I think that's a cupcake worthy endeavor. Anyway, I wanted to make these cupcakes because I love the way they look in the book. I thought that I had a plain piping tip, but I don't. So rather than kisses, my snickerdoodles have swirls.

These cupcakes were a HUGE hit with everyone at work; this is strange because I tasted one and immediately thought: fine, but I'd rather have something else. I think that if you like cinnamon, you'll really like these cupcakes. Also, because these are the same coworkers that couldn't understand how I made cookies in the shapes of fish and lighthouses, you can just imagine their bewilderment when I tried to explain that it was 7 minute frosting. They loved this frosting, but they were just blown away that egg whites, water, and sugar create this icing. One of them told me that she was going to go home and "ponder the chemistry of it all." Far out.

LOL - your post made me laugh, and the cupcakes look AMAZING!! I have never made any sort of snickerdoodle before...I may just give these a try!

I LOVE the frosting on these! The little speckles of cinnamon kill me! I've never been very good at cupcakes (cupcakes = decorating, and that's not in my skill set). I had to laugh about your coworkers amazement over the boiled icing. The glaze on the spice bars is to die for. If you can't make it to the grocery store, make the glaze and put it on toast or ice cream. Or a spoon. Yes, a spoon will do.

I made these last week and was really glad I did! I need to work on my frosting so it looks like yours! I hope you get to the bars asap! They really are good.

Ha you crack me up. Must be why I love making meringue frostings. The chemical reaction of it all ;)

These look absolutely mouth watering and I am a cinnamon lover...and a snickerdoodle lover. I just got this book for my birthday and havent gotten a chance to breeze through it just yet! (so dont sign me up for the book, I just wanted to tell you how great these look!)

Oooh I wish I could make these now! They look so good! I'm going to be patient, though, and hold off until they're selected for the MSC group and just live vicariously through you until then :)

I don't love to eat fancy frosting, but yours sure is pretty to look at! And I love the polka dot cupcakes papers. What adorable cupcakes!

I love the swirls. And the whole science part is a lot of why I love baking (and of course the tasty results). Anything involving eggs is usually pretty amazing.

Mmmmm... I love cinnamon, so snickerdoodle cupcakes are right up my alley! And a 7 minute frosting to boot (that's a personal favorite- I think it tastes like yummy marshmallows). I can't wait to give these a try.

I thought your swirls were beautiful, by the way, so thumbs up on using that particular pastry tip!
