Classic Blueberry Muffins
pg 68 of The King Arthur Baker's Companion
1 stick (4 oz) butter
1 cup sugar
1/2 teaspoon salt
2 large eggs
2 teaspoons baking powder
2 cups flour
1/2 cup milk
1 tsp vanilla extract
2 1/2 cups fresh blueberries
cinnamon sugar for the top
Preheat oven to 375. Cream together butter, sugar, and salt. Add the eggs, one at a time, beating well after each addition. Add the baking powder. Then add the flour alternately with the milk, beating well after each addition. Mash 1/2 cup of blueberries and add them to the batter. Stir in the vanilla at the end, along with the whole blueberries.
Mound the batter into 12 lightly greased or paper lined muffin cups, filling each completely to the top (actually, over the top; the batter is thick enough that it'll hold its shape). Sprinkle with cinnamon sugar. Bake for 30 minutes or until a tester comes out clean. Remove muffins from the oven, and after 5 minutes remove them from the pan to cool completely on a rack, or gently flip them sideways in the pan.

OK, I edit for a living, and these one-sentence blogs are driving me crazy; I have this insane urge to get out my cyber-pencil and add some punctuation...I'm very stressed out over this, so I think I'll go home and bake some blueberry muffins, probably these, because they look fabulous.
I love KA flour and love their website and recipes. Haven't tried this one yet, though I've made several blueberry muffins (one is rated 10 out of 10, hard to beat). I'm loaded up with blueberries, so I'll give these a try.
These look delicious...like a bakery muffin, only much tastier (they always look better than they taste). I will put this one on my to-try list, stat.

These look fantastic! I love the cinnamon sugar sprinkled on top! I have that King Arthur cookbook but haven't made too much from it yet. I really need to find time to flip through and gives of the recipes a shot.

Mmmm- I think I'll have to give those muffins a try while blueberries are at their peak... yours look SOOO good! I've heard good things about The King Arthur Baking Companion as well as their whole grain baking book. I'll have to check them out on my next trip to the bookstore!

This could not have come at a better time. I am leaving town tomorrow and wanted to make muffins but all that I have tried look like some jiffy box mix. Yours look like some yummy bakery muffins....and I just happen to have LOADS of blueberries looking to get used ;) Thanks Jessica!
I finally made these, but the post won't publish for several weeks. They are quite delicious and I rated them a 9 out of 10 which is pretty high. My fave is still my coconut blueberry muffins on my blog, which is a solid 10 out of 10.
