CEiMB: Grilled Thai Beef Salad

This week I got to make a salad that I've been eying for quite some time -- the Thai beef salad. It just sounds good, doesn't it? I love a good salad, and I don't make them often enough.

When my brother was visiting, we had T-Bone steaks one night for dinner. I've mentioned here before that I really don't like leftovers. While I'll reheat pasta from time to time, I really hate reheating meat. It just does something funky to the taste, not to mention that the meat is officially overcooked when it's done reheating. We had a steak leftover, and I knew that it was destined for this salad. So, please pardon the pale shade of pink in the steak, I think that's because it was cold. This also means that my steak didn't marinate, but I thought that the dressing was flavorful enough to compensate for the loss of any marinating time. I added some diced sweet peppers to the salad for color, flavor, and a nice crunch. The dressing is everything that's promised at the beginning of the recipe: it's sweet, tart, and spicy. My dressing was very spicy as I got a little overzealous with the sriracha. It's a delicious salad, and I'm sure that I'll make it again.

That looks super. I'm with you on leftovers. I will only eat left over vegetarian protein sources. Never veggies and when I used to eat meat, never meat. It was a mental thing w/ me and then my stomach would protest.

Your salad looks delicious! I am actually a big fan of leftovers though...and my boyfriend is guilty of regularly eating our leftovers from dinner the next morning for breakfest... :)

Jessica, what a wonderful salad. I've been looking for delicious easy meals that I can make for one (me) while my honey is at work, otherwise it's a Special K lunch. I'm going to have to try it. Thanks love.

Regarding leftovers, that's the dilemna of cooking for one, yeah? I made red beans and rice with andouille sausage Monday night, and that's what I had for 11 consecutive meals, including breakfast. I finally finished them off this morning. I wont be eating that the next few months, haha!

I bet the red pepper was really great on this; I wish I had thought of that. I also only added a teaspoon of red curry paste, but I think it would have been better a little spicier. Glad you were able to repurpose your leftovers into something yummy!

Looks yummy! Ours was spicy, too, since I eyeballed the red curry paste, so I added more soy sauce and lime juice. I didn't make mine with steak, but I think this would make a killer marinade.

Your salad looks so beautiful! It's colorful and just perfect for summer. I don't really enjoy salads unless they have chicken or steak in them so this one would be a great meal :)

I am so with you on the not reheating meat thing. I'd rather eat it cold than reheat it. I don't mind eating leftovers of casseroles or pasta-y things, though.
