TWD: Coconut-Roasted Pineapple Dacquoise

There are so many recipes in Dorie's book that look just lovely . . . but this is the recipe that I've had my heart set on making. First of all, the picture in the book is just gorgeous. Second of all, I adore pineapple and it's not really used in a lot of desserts. I like to eat broiled or grilled pineapple with sweetened Greek yogurt for dessert. I also just like pineapple plain or in fruit salads. The point really is, though, that I love pineapple and I was so excited that Andrea chose this recipe! I didn't think that this was a really hard dessert to put together . . . but it does require a stretch of time. I made the meringue layers Sunday evening. Then Monday morning before work I was in the kitchen, in my PJ's, making the ganache and broiling the pineapple. I wondered, am I the only nut working on my TWD dessert on Monday morning in her jammies? Then I got home from work and whipped up the ganache and put the dacquoise together. All told, it took about 24 hours from start to finish, but that's because I took breaks for sleep and work. In my opinion, it's not necessarily a difficult recipe, but it requires some careful reading and a little bit of meticulous planning. If you read this blog at all, then you know that there was cosmic intervention that allowed this dessert to survive my usual haphazard recipe reading. I'm still not sure if I beat the ganache up enough, but I read tales of separating ganache on the P&Q this week and I figured it was better to err on the runny side of things. At 5 pm on Monday evening I'm not in the mood to redo a ganache!

This dessert lived up to my expectations . . . and then some! I made a half of a recipe so it was really the cutest little thing. I didn't let it sit 6 hours before I dug into it . . . it only made it about 3 or 4 hours and then I just had to try it. If you love coconut and pinapple as I do, then you will absolutely love this dessert! Dudley proclaimed it "awesome" and I absolutely loved every bite of it. Now, I have quite a bit of white chocolate ganache left over; even the halved recipe made way too much. Does anyone have ideas as to how to use it up?

Your pineapple has such a pretty color to it. I probably should have left mine in longer, but the roasted pineapple still tasted divine. Glad you liked this one so much!

Your coconut stuck nicely to the sides and your pineapple looks toasted. I could not get mine to toast, cus I was not patient! Im so glad you liked this recipe after that long stretch of time it took to make it! Nice job.

Oh, this looks so beautiful. I loved this dessert and I thought the whole process was magical and fun. Like you, I tasted a bit of the coconut while it was just sitting there waiting its turn, too. Very nice job.

Grilled pineapples are one of the best things EVER. When the sugars caramelize on the tops with the smoky grill marks, YUM.

Looks gorgeous. I love the little half size recipe. I always bake in jammies or sweats. I've been dipping strawberries in my extra white chocolate ganache. I think any fruit with some of that on top would be awesome. Spoonfuls as you pass the fridge work too to get rid of it.

Nice job! I have a lot of ganache leftover too. Some homemade biscotti with the ends dipped in the white chocolate would be good. Your photos are great.

Oh, it looks INCREDIBLE, and I am now totally regretting skipping this week. It was really the "meticulous planning" part that scared me off. I clearly have to go back and try this one another time - it really does sound like a great summer dessert!

Your cake looks stunning. As for the extra ganache, try a variation of the bars from this week's SMS recipe, use it to frost cupcakes or if you like coconut, make some macaroons and dip them in it. YMU

Lovely! I'm a huge pineapple fan, too, but I'd never thought of having it with Greek yogurt. Yum.

I'm so glad to have some company in the jammies bakers guild! I think of all of the times I've dipped my sleeve in a bowl of melted chocolate/frosting/meringue/custard, etc., and I'm so glad I wasn't wearing some nice blouse I just bought and wore to work for the first time.

Your dacquoise is the most beautiful thing I've seen in a long time! I'm so excited both you and Dudley liked it.

Your dacquoise looks really good! I like the toasted coconut on the sides. I just put my meringue in the oven so I'm not sure if I'll complete this before Wednesday! Yipes.

This seems to be the recipe that kept everyone up at night or got them up early in the morning! The dedication of TWD bakers astounds me.

Has the ganache firmed up at all? Can you roll it into truffles, or is it still too soft? Maybe use it to top brownies, or in between cake layers, or as a tart filling along with some fresh berries?

Haha I bake in my pajamas all the time! Your dacquoise looks amazing! This one did take some time and planning, but I'm with you - it was so incredibly delicious! I only made 1/4 of the recipe and it's already gone.

Doesn't everyone bake in jammies???

i keep left over ganache in a squirt ketchup bottle in the fridge. Then in the microwave for about 12 seconds and it is always ready for ice cream, cake, etc.

Beautiful! Grilled pineapple is such a great dessert too, especially in the summer.
